Springtime Salad

Springtime Salad


  • 10-12 cups arugula or mixed greens

  • 2 large carrots (spiraled)

  • 4-5 radishes (sliced)

  • 5 asparagus (chopped)

  • 1/4 c chopped leek **you may also use white or purple onion**

  • 1/2 c raw mushrooms

  • 1 avocado (sliced)


  1. Layer arugula or mixed greens into salad dish.

  2. Top with remaining veggies.

  3. Serve with homemade dressing!
