Skinny Chicken Brushetta Pasta
4 medium size cooked chicken thighs
1 package organic angel hair pasta
2 large tomatoes (chopped)
4 cups spinach
1/8 cup fresh basil (chopped)
1/4 cup olive oil
2 Tbsp balsamic vinegar
1/2 medium size white or yellow onion (chopped)
1/2 cup mushrooms (chopped)
5 kalamata olives (optional)
1 tsp granulated garlic
2 Tbsp Italian seasoning
Salt + Pepper to taste
Cook chicken and pasta according to package and set aside.
In medium sized sauce pan, heat olive oil, vinegar, and garlic.
Add onion and mushrooms to oil, sautéing until translucent or clear; over medium heat.
Next, add spinach, tomatoes, basil, olives (optional), Italian seasoning, and salt/pepper to mixture. Continue to sauté until all vegetables are done.
Add chicken and pasta to mixture.
Keep pan heated on low for additional 5-10 minutes, stirring occasionally.
Serve with fresh parmesan cheese (optional)
