SKINNY Cheese + Herb Zucchini Stuffed Boats!

Ingredients: 

  • 4 medium sized zucchini squash (can be yellow or green)

  • 1/4 c olive oil

  • 1 cup shredded mixed cheese

  • 1/2 cup diced mushrooms (you can omit these if desired) 

  • 3 tbsp Italian seasoning

  • 1/2 tsp granulated garlic

  • Salt + pepper to taste

Directions: 

  1. Preheat oven to 350 degrees.

  2. Wash and slice ends off zucchini, then slice entire zucchini in half (length wise).

  3. Using spoon, scoop out middles of zucchini, creating a “boat”- as this will act as your holder. Discard zucchini seeds.

  4. Next, in separate medium bowl, combine: olive oil, cheese, mushrooms, Italian seasoning, garlic, and salt/pepper. Stir with spoon until well mixed.

  5. Evenly fill zucchini boats until all mixture is used.

  6. Bake for 20-25 minutes at 350 degrees (or until tender)

  7. Turn oven off, then turn settings to high broil.

  8. Broil for 3-4 minutes or until cheese is bubbly and crisp!
