(SKINNY) Crunchy Asian Salad

Refreshing (SKINNY) Crunchy Asian Salad


Approximate Serving Size: 6-8

For Salad: 

  • 1/2 medium green cabbage

  • 1/2 white onion

  • 1 whole large avocado

  • 1 whole large cucumber (peeled)

  • 1/2 red bell pepper

  • 2 large carrots

For Dressing: 

  • 1/4 c olive oil

  • 1/4 c apple cider vinegar

  • 2 Tbsp sesame oil

  • 1/2 tbsp maple syrup

  • 1 Tbsp soy sauce or liquid aminos

  • 1 tsp granulated garlic powder

  • 1 Tbsp sesame seeds

  • Salt + Pepper to taste


  1. In glass bowl, whisk all ingredients for dressing and set aside.

  2. Next, thinly chop cabbage and white onion, tossing together in large salad bowl.

  3. Dice: avocado, cucumber, and bell pepper; then add to salad bowl.

  4. Shred carrots and add to salad mixture as well.

  5. Stir dressing once more, then pour over salad mixture.

  6. Toss and let set for at least 30 minutes before serving (this ensures all the flavors are soaked together!) 

  7. If desired, add crunchy ramen noodles to the salad (although this doesn’t make it healthier, it is pretty tasty!)
