Quick + Healthy Mexican Lunch Bowl


  • 3/4 c brown rice

  • 1/2 c ground burger (taco seasoned)

  • 1 cup shredded lettuce

  • 1/4 c tomato

  • 3 T green onion (optional)

  • 1 T white onion

  • 1/4 c black beans

  • 1 T sour cream (optional)

  • 2 T shredded cheese (optional)

  • Salsa to top!


  1. Layer in bowl: cooked brown rice, burger, let’s, tomato, onion(s), beans, sour cream, and cheese!

  2. Serve with organic chips and possibly…. a skinny margarita on the rocks
