Quick Chicken-Tortilla Crockpot Soup

Quick Chicken-Tortilla Crockpot Soup


-1/2 cup chopped onion
-1/2 cup chopped bell peppers (I used red, yellow, and orange.. but you can use any colors!)
-1 tsp minced garlic
-3 russet potatoes (cubed)
-4-5 frozen chicken tenderloins
-1/2 cup diced mushrooms
-1 14.5 oz can diced tomatoes
-1 14.5 oz can black beans
-1/2 cup frozen corn
-32 oz chicken broth
-1 tsp of each: chili powder, cumin, granulate garlic, parsley
-1/2 tsp cayenne pepper
-Salt/Pepper to taste


-Drizzle olive oil in crockpot and place frozen chicken tenders on bottom
-Layer in remaining ingredients
-Place crockpot on high for 4-5 hours or until chicken is done
-Remove chicken and dice (then place back in crockpot)
-Add more seasoning if necessary

Top with: Sour cream, tortilla chips, salsa, fresh lettuce, cilantro, cheese, and avocado.
