Homemade Breakfast Sausage

Good Morning Sister! Did you know that breakfast is one of the most important meals of the day? Eating breakfast can:

  1. restore your energy levels that were depleted overnight

  2. lower your body’s stress hormones

  3. positively influence your food consumption over the day

Few things say breakfast like sausage does! Am I right, mama?! Unfortunately, most commercially prepared sausages are loaded with sodium and preservatives which make them a less than desirable way to start your day. Rather than completely forgo, we decided to create a sausage recipe that is healthy, bursting with flavor, and easy to prepare. Now you can get all the yumminess of sausage AND feel good about serving it to your family! See below for all the delicious details!

Ingredients:

1lb lean ground pork or turkey

2 garlic cloves, minced

1 tablespoon dried sage

1 teaspoon dried thyme

⅛ teaspoon nutmeg

½ teaspoon black pepper

1 teaspoon coarse sea salt

1 pinch red pepper flakes

2 tsp olive oil

Directions:

  1. Work the spices (garlic, sage, thyme, nutmeg, black pepper, salt and red pepper flakes) into the meat with your hands.

  2. After chilling the meat mixture for 30 minutes, shape each portion (about 2 tablespoons) into a patty. Alternatively you can skip this step and cook the pork as you would ground meat.

  3. At this point you have two options:

2. Wrap uncooked patties in plastic wrap and store in refrigerator or freezer (for two days or 3 months respectively) until you are ready to use them.

  1. Enjoy! This breakfast sausage is ahh-mazing in breakfast sandwiches, mixed into biscuit gravy, sprinkled over potatoes and cooked into omelets.
