Healthy + Easy Crockpot Chicken Parmesan

My entire house smells like a piece of Italy and yours will too in just a few short hours! Healthy + Easy Crockpot Chicken Parmesan at your service! My recipe is gluten free, but there is an option for you to omit the gluten free blend if desired! :-) ENJOY, MAMAS and get to simmering! 

Healthy + Easy Crockpot Chicken Parmesan 

Ingredients: 

  • 2 tbsp olive oil (to drizzle)

  • 4 medium chicken breasts

  • 2 tbsp Italian seasoning

  • 2 bay leaves

  • 1 tbsp granulated garlic

  • Salt + Pepper to taste

  • 1/2 white onion (chopped)

  • 1 large carrot (chopped)

  • 1/2 cup white mushrooms (chopped)

  • 1/2 cup yellow/orange/red bell peppers (chopped)

  • 1x 14.5 oz can organic diced tomatoes

  • 2x 25 oz jars organic spaghetti sauce

  • 1x 12 oz box uncooked gluten free noodles (or regular noodles if preferred! :))

  • 1/4 cup PANKO bread crumbs

  • 1 cup mozzarella cheese

Directions: 

  1. Drizzle bottom of crockpot with olive oil and place chicken breasts on top of oil.

  2. Next, layer all ingredients and spices into crockpot, except for: noodles, bread crumbs, and cheese.

  3. Set crockpot to high and "cook" for 2 hours.

  4. After 2 hours, add uncooked noodles (stir in with spoon), then top the mixture with bread crumbs and cheese.

  5. Bake on high for 2 more hours.

  6. Serve with fresh bread + salad!
