Healthy Crockpot Enchiladas

Approximate Serving Size: 4-6 hungry mouths!  


  • 1 lb ground beef

  • 2 tbsp olive oil

  • 1 tsp granulated garlic powder

  • 1 medium white or yellow onion (Diced)

  • 1 yellow bell pepper (Diced)

  • 3/4 cup white mushrooms (Diced)

  • 1 15oz  can black beans

  • 4 medium size tortillas

  • 1 1/2 cup grated cheese

  • Salt + Pepper to taste

For enchilada sauce: 

  • 1 15oz can tomato sauce

  • 1/2 cup chicken broth

  • 1 tbsp cumin

  • 1 tsp granulated garlic powder

  • 1/2 tsp chili powder

  • 1 tbsp maple syrup

  • Salt + pepper to taste


  1.  In a medium size frying pan, brown ground beef, 1 tbsp olive oil and garlic powder until done.

  2. Next, remove meat from pan and add onion, bell pepper and mushrooms to remaining 1 tbsp olive oil. Add additional salt and pepper to taste, sautéing on medium until tender.

  3. Add meat back to mixture; then add remaining can of black beans (note: do note rinse or drain beans).

  4. Simmer meat and bean mixture on low for 10 minutes.

  5. Meanwhile, in medium sized sauce pan, combine: tomato sauce, chicken broth, cumin, granulated garlic, chili powder, syrup, and a pinch of salt/pepper.

  6. Stir ingredients, then bring to boil- letting boil for 20-30 seconds, then reducing to simmer for 1 minute. Sir frequently.

  7. Add enchilada sauce to meat mixture and let simmer on low for 10 additional minutes.

  8. Meanwhile, set crockpot on low and spray with non stick spray.

  9. Layer: tortilla, 3/4 cup meat mixture, 1/4 cup cheese. Repeat until all ingredients are used.

  10. Top with additional cheese as desired.

  11. Cook on low for 1 hour.
