Healthy Crispy Chicken Fingers


  • 2 large chicken breasts (cut into strips)

  • 2 eggs

  • 1/2 cup almond milk

  • 1/2 cup almond flour

  • 1 cup panko bread crumbs

  • 1 tbsp garlic powder

  • 1 tbsp parsley

  • 1 tbsp Italian seasoning

  • 1/4 tsp paprika (optional for heat!)

  • 1/2 tsp salt

  • 1 tsp pepper


  1. Preheat oven to 375 degrees.

  2. If you haven’t already, cut chicken breasts into thin strips

  3. Layout 3 medium sized bowls (these will be used for dipping!)

  4. In the first bowl, whisk and pour eggs and milk into bowl, then set aside.

  5. In the next bowl, add flour and all spices, then set aside.

  6. In the final bowl, add panko bread crumbs, then set aside.

  7. Next, line baking sheet with foil or parchment paper and spay with non-stick spray.

  8. Now, take chicken (one by one) and get to dipping!

  9. Dip chicken pieces into egg mixture util coated completely. Next, dip into flour and spice mixture, then finishing with dipping into panko breading.

  10. Once chicken is fully coated, lay onto baking sheet.

  11. Repeat this routine until all chicken is coated.

  12. Bake at 375 for 35-40 minutes or until well done.

  13. Finish with high broil for 2 minutes for extra crispness if desired!
