Healthy Chocolate Christmas Bark


  • 1/2 cup organic coconut oil

  • 1/2 cup organic chocolate chips

  • 1/4 cup organic peanut butter

  • 1/2 cup unsweetened organic coconut flakes

  • 1/2 cup organic dried cranberries

  • 1/4 cup organic pumpkin seeds

  • 1/4 cup raw almonds

  • 3 tablespoons raw quinoa

  • 1/4 cup raw almonds


  1. In a microwave safe bowl, combine: coconut oil, chocolate chips and peanut butter. Heat on medium for 60 seconds.

  2. Remove from microwave and stir until all ingredients are melted. If needed, add more time to melt.

  3. Next, combine remaining ingredients to chocolate mixture including: coconut flakes, cranberries, pumpkin seeds, quinoa , and almonds. Stir with spoon and set aside.

  4. Line a deep baking dish with sides (this is important so the chocolate doesn’t spill over the edge!) with was or parchment paper and spray with non-stick spray.

  5. Pour chocolate mixture over paper and cover with saran wrap.

  6. Place in fridge for 1 hour.

  7. Remove from fridge and break into pieces with hands or knife!

  8. Store bark in air tight container in refrigerator or freezer.
