Healthy "Buck Eyes" (Chocolate Peanut Butter Balls)


Serving size:6-8 servings. 


Peanut butter mixture:

  • 1/2 cup organic peanut butter

  • 4 Tbsp coconut oil

  • 2 Tbsp maple syrup

  • 2 Tbsp almond flour

  • 1/4 tsp vanilla extract

Chocolate mixture:

  • 1/4 cup organic chocolate chips (affiliate link* This Kirkland brand is awesome! It’s what I use for all our recipes). 

  • 2 tbsp coconut oil


  1. In a high powered blender or food processor, combine: peanut butter, coconut oil, maple syrup, almond flour, and vanilla extract. Pulse mixture then blend on high for approximately 45 seconds or until well mixed.

  2. Transfer peanut butter mixture to small bowl and set aside.

  3. Next, in small microwaveable safe bowl, combine: chocolate chips and coconut oil.

  4. Heat for 30-45 seconds or until mixture is melted. Stir with spoon so chocolate and oil are evenly combined.

  5. Next, use spoon to scoop out peanut butter ball, then form into circles with hands. Dip peanut butter ball into melted chocolate mixture and swirl around until the entire “ball” is coated in chocolate.

  6. Spray parchment paper with  non-stick spray and set balls onto paper.

  7. Repeat until done.

  8. NOTE: I recommend storing these balls in the fridge or freezer. It will keep them firm and melt in your mouth!
