Healthy Avocado Pesto


  • 1 large avocado

  • 1 cup fresh basil leaves

  • 1/2 cup olive oil

  • 1/4 cup walnuts

  • 1 tsp granulated garlic

  • 1/2 squeezed lemon (juice)

  • 1/2 cup grated parmesan cheese

  • 1/4 cup water

  • Salt + Pepper to taste


  1. Place all ingredients into food processor or high powered blender.

  2. Pulse, then blend on high until creamy (approximately 2 minutes)

  3. Pour pesto into air tight container and refrigerate for at least 1-2 hours. (This helps all the flavors blend!)

  4. Serve over cooked noodles and top with fresh cherry tomatoes and grated Parmesan. If desired, Mix pesto with cooked pasta over stove top to heat!
