Healthy Apple Spice Muffins

Apple Spice Muffins 

Ingredients 

-3 c raw (gluten free) oats

-2 T coconut flour

-1 T baking soda

-1 T cinnamon

-1/2 tsp pumpkin pie spice

-1/4 c honey

-1/4 c coconut oil

-1 banana

-1/4 c organic maple syrup

-1 T vanilla extract

-1/2 c almond milk

-1 large apple (grated)

-Pinch of salt

Directions 

  1. In a blender, pour oats in and pulse, then blend on high for 30 seconds, or until oat flour is formed

  2. Next, pour in coconut flour, baking soda, cinnamon, pumpkin pie spice, and salt

  3. Pulse, then blend for 10 seconds or until well mixed

  4. In a separate bowl, combine honey, coconut oil, banana, maple syrup, extract, and milk

  5. Mix with spoon until well blended

  6. Pour wet mixture into dry mixture and pulse (~15x), then blend on low, using spoon to scrape batter of edges

  7. Gently fold in grated apple

  8. Spoon batter into greased muffin tins, filling each tin 3/4 of the way full

  9. Bake at 350 for 15-20 minutes or until golden brown

  10. Top with sugar in the raw if desired
