Healthy Apple Nut Crisp 



-2 cups gluten free oats 

-1/2 cup coconut oil

-1 cup shredded coconut (unsweetened)

-1 cup raw cashews

-1/4 cup organic maple syrup (or honey)

-5 organic apples (red or green)

-2 T cinnamon


  1. In a food processor, combine oats, coconut oil, shredded coconut, cashews, and syrup.

  2. Pulse, then blend until well mixed and "crumbly".

  3. Preheat oven to 350 degrees.

  4. Wash and slice apples into quarters.

  5. Sprinkle cinnamon over apples, toss, and set aside.

  6. Grease 9x13 baking dish with non-stick spray.

  7. Layer half of oat batter into tray.

  8. Pour apples over pressed batter.

  9. Layer remaining oat batter onto of apples.

  10. Bake for 25-30 minutes or until golden brown.

  11. Top with fresh coconut ice-cream and ENJOY!
