Grilled Avocado Chicken

Serving size: 3-4.

Ingredients: 

  • 6-8 thin pieces chicken breast/tenders

  • 1 large avocado

  • 1 large tomato

  • 1/2 small onion

  • 1/2 cup fresh basil

  • 1/4 cup balsamic vinegar

  • 1/4 cup olive oil

  • 1/2 tsp granulated garlic

  • 1 Tbsp maple syrup

  • Salt + Pepper to taste

Directions:

1. Preheat grill to medium heat OR if you’re using a stove top pan, preheat to medium-spraying either with non-stick spray.

2. Drizzle a tad of olive oil over chicken breasts, poking each breast with a fork to ensure oil is soaking in. (Note: this oil is in addition to that from which the recipe calls) 

3. Add a pinch of salt and pepper to each breast (just salt/pepper one side) and place on grill.

4. Cook chicken approximately 10-12 minutes on each side or until done.

5. Meanwhile, dice the following: avocado, tomato, onion, and basil; placing all ingredients in large bowl.

6. To vegetable mixture add:  vinegar, oil, garlic, syrup, and a pinch of salt/pepper. Stir with spoon and set aside.

7. Assemble chicken onto serving plate and top with vegetable mixture. Serve with fresh salad and brown rice or crusty bread!
