Gluten Free Banana Peanut Butter Baked Oatmeal

Serving Size: 9-12 pieces (depending on your cut size  )

Ingredients: 

  • 2 cup gluten free oats

  • 1/4 cup raw quinoa

  • 1 cup almond milk

  • 2 eggs

  • 1/4 cup + 2 Tbsp maple syrup

  • 1 Tbsp vanilla extract

  • 1 tsp cinnamon

  • Pinch of salt

  • 1/2 cup peanut (or nut) butter

  • 1 tsp baking soda

  • 1/4 cup melted coconut oil

  • 1 large banana

Directions: 

  1. Preheat oven to 350 degrees.

  2. Spray 9×13 dish with non-stick spray.

  3. In a medium sized bowl, combine: oats, raw quinoa, cinnamon, salt, and baking soda. Mix with spoon and set aside.

  4. In a separate bowl, combine: milk, eggs, maple syrup, vanilla, nut butter, and melted coconut oil. Mix with spoon and set aside.

  5. Gently pour dry ingredients into wet ingredient mixture, stirring constantly until well blended.

  6. Finally, slice banana and gently fold into mixture.

  7. Pour batter into 9×13 baking dish and bake for 25-30 minutes or until done.

  8. Top with fresh bananas and additional maple syrup!
