Gluten Free Apple Spice Scones

Ingredients: 

  • 1 cup almond flour

  • 1 cup potato starch

  • 1/4 cup sugar in the raw

  • 1/2 cup coconut oil

  • 1 Tbsp vanilla extract

  • 2 eggs

  • 1/4 c organic maple syrup

  • 1 cup granny smith apples (diced)

  • 1 Tbsp cinnamon

  • 1/4 tsp ginger

  • 1/4 tsp cloves

  • 1 Tbsp baking soda

  • Pinch of salt

Directions: 

  1. Preheat oven to 325.

  2. In a medium bowl, combine: almond flour, potato starch, sugar in the raw, cinnamon, ginger, cloves, baking soda, and salt. Set aside.

  3. In a separate bowl, combine: coconut oil, vanilla extract, eggs, and maple syrup. Set aside.

  4. Mix wet ingredients well (in kitchen aid or with electric hand mixer). Whip until creamy (NO LUMPS!)

  5. Once wet ingredients are well mixed, gently pour in dry ingredients, until evenly mixed. (Set aside)

  6. Fold in apples with spatula.

  7. Roll dough out (~2-3 inches thick!) and cut out triangle shapes (to resemble scones!)

  8. Line baking sheet with parchment paper and place scone dough on-top.

  9. Bake for 20 minutes or until golden brown.
