The BEST Healthy + Moist Gluten Free Banana Bread


  • 2 large bananas

  • 2 eggs

  • 1/4 cup organic maple syrup

  • 1 tsp vanilla extract

  • 1/4 cup melted coconut oil

  • 1 tablespoon cinnamon

  • 1 cup almond flour

  • 2 tablespoons brown sugar

  • 1/2 cup gluten free oats

  • 1 tsp baking soda

  • 1/2 cup chocolate chips (optional!)

  • Pinch of salt


  1. Preheat oven to 325 degrees

  2. In medium bowl, mash banana with fork, then add: eggs, maple syrup, vanilla extract, and melted coconut oil. Mix with fork until well blended.

  3. In a separate bowl, combine: cinnamon, flour, brown sugar, oats, salt and baking soda.

  4. Slowly add dry ingredients into wet, stirring frequently until well blended.

  5. Gently fold in chocolate chips.

  6. Spray standard bread loaf pan with non-stick spray, then pour batter in.

  7. Bake for 45-55 minutes or until golden brown.

  8. Let set for 20 minutes before serving.
