Balsamic Chicken Sheet Pan Dinner!


  • 2 large chicken breasts (fresh or frozen) *if frozen, make sure the chicken is completely defrosted!

  • 1/2 cup of the following:

    • Chopped white onions

    • Zucchini (green or yellow)

    • Brussel sprouts (sliced)

    • Broccoli

    • Carrots (chopped)

    • Mushrooms (sliced)

    • Bok Choy (chopped)

    • Dressing

      • 1/2 cup olive oil

      • 1/2 cup balsamic vinegar

      • 1 TBSP brown sugar

      • 1 TBSP granulated garlic powder

      • 2 TBSP Italian Seasoning

      • Salt + Pepper to taste


  1. Preheat oven to 325.

  2. Line baking sheet with foil or parchment paper, then spray with non-stick.

  3. Place chicken breasts in middle of pan, then line surrounding area with vegetables.

  4. In a separate bowl, combine all ingredients for dressing, whisking with fork.

  5. Pour dressing evenly over vegetables and chicken.

  6. Bake for 55 minutes or until done, gently flipping vegetables and chicken after 30 minutes.

  7. Serve with fresh rice and salad!
