Avocado + Tomato + Corn Salad
Happy Memorial Day!
Thank you to all of our veterans and armed service men and women who have served and who are currently serving. We salute you. God Bless you and your families!
In honor of Memorial Day weekend, we’re kicking off the “unofficial start to summer” with an absolutely GORGEOUS meal! The Blossoming Mommy and Baby Avocado + Tomato + Corn salad is delicious on its own and can also be used as a great side dish to any summer meal. Packed full of nutrients, omegas, healthy fats, and more…. your tastebuds and body will be thanking you!
AVOCADO TOMATO CORN SALAD
-2 large avocados (diced)
-2 large tomato (diced)
-1/2 purple (or white) onion (diced)
-4 (husked) corn on the cob
-1 bunch fresh basil leaves (chopped)
-1/4 cup olive oil
-1/8 cup red wine vinegar
-1/2 tsp granulated garlic
-Pink Himalayan sea salt + ground pepper (to taste!)
In a large bowl, combine: avocados, tomatoes, onion, and basil.
Next… START YOUR GRILL! Yep, we’re grilling, sister! On medium heat, spray down your grill with non-stick spray. As your grill is warming up, gently lather your 5 corn on the cob(s) with coconut oil and salt/pepper to taste. Place corn on grill (approx 3-5 minutes on each side or until you have a nice grill to both sides).
Remove corn from grill and let cool. Once cooled, take knife and cut corn kernels off of the cob and pour into the tomato/avocado mixture.
Drizzle mixture with fresh olive oil, vinegar, garlic, and salt/pepper to taste. Toss gently. Cover and let set for 1 hour in your fridge so all of the flavors marinate well together.
Hi, YUM. SO YUM. Dip hearty crackers into the salad or eat plain! Enjoy!
