Avocado Salsa Chicken


  • 4 chicken breasts

  • 3 large avocados (diced)

  • 1 lime (halved and juiced)

  • 1/4 cup chopped onion

  • 1/2 cup chopped cilantro

  • 3 T organic olive oil

  • 3 T red wine vinegar

  • 1 large tomato (diced)

  • 1 Tablespoon granulated garlic

  • Salt, Pepper (to taste)


  1. Bake chicken breasts according to preference. Generally, I will bake all chicken breasts (x4) at 350 for approximately 30-35 minutes or until well done.

  2. For salsa: In medium sized bowl combine avocados, lime, onion, cilantro, olive oil, vinegar, tomato, granulated garlic, salt, and pepper. Mix gently with spoon and set aside.

  3. When chicken is done baking, spoon salsa on top of chicken. If desired, top with fresh mozzarella!
