Asian Cucumber Salad


  • 2 large cucumbers

  • 1 small yellow onion

  • 2 large carrots

  • 1/4 cup chopped red bell pepper

  • 1/8  cup apple cider vinegar

  • 1/8 cup olive oil

  • 1/2 tsp salt

  • 1 tsp pepper 

  • 1 tsp liquid aminos or soy sauce

  • 1 tsp sugar

  • 1/8 tsp granulated garlic

  • 1 tsp sesame oil

  • 2 tbsp sesame seeds


  1. Using mandolin, slice cucumbers thinly. If preferred, peel outer layer prior. If you do not have a mandolin, use a knife to thinly slice cucumbers. Place cucumbers into large serving bowl.

  2. Next, use a spiralizer to spiralize carrots and place into cucumber mixture.

  3. Dice onion and add to mixture.

  4. To veggie mixture add remaining ingredients.

  5. Stir with spoon and cover bowl with saran wrap.

  6. Let set in fridge for at least one hour, as this will ensure all the delicious flavors are soaking in and marinating together!
