Easy Baked Beef Tacos
Serving size: 4-5
1 lb ground beef
1 Tbsp olive oil
½ cup chopped white onion
½ cup chopped mushrooms
2 garlic cloves (minced)
1 Tbsp cumin
1 Tbsp better than bullion beef base
½ cup water
2 Tbsp taco seasoning
½ cup tomato sauce
1 cup chopped tomatoes
2 cups shredded iceberg or romaine lettuce
¾ cup shredded cheddar or mixed cheese
¾ cup sour cream
¾ cup salsa of choice
1 15oz can black beans
10 hard taco shells
To large frying pan, add olive oil and turn heat to medium-low. Let oil heat for 1 minute, then add minced garlic. Let garlic saute for 2 minutes, stirring intermittently, then add ground beef.
Turn heat to medium and brown beef until done. Remove meat from pan. Drain excess grease if necessary or use grease to saute vegetables in.
Turn heat down to low-medium and carefully add onion and mushrooms. Saute until tender, then add the meat back to mixture. Stir with spatula so meat and vegetables are evenly mixed.
Next, add: cumin, better than bullion base, water, tomato sauce, and taco seasoning. Mix spices and sauce evenly into meat and vegetable mixture, then let simmer on low for 10 minutes, stirring intermittently
Next, preheat oven to 350 degrees.
Spray deep dish baking pan with non stick spray and add hard taco shells.
Next, use a spoon to fill bottom ¼ of each taco shell with meat. Complete process until all shells have been filled.
Next, rinse and drain black beans, then add evenly on top of meat mixture. (Use entire can of beans!)
Next, evenly distributed cheese on top of beans, then place tacos into oven to bake for 10 minutes.
Remove tacos from oven and top with tomatoes, shredded lettuce, sour cream, salsa, and additional cheese if desired!
