Crockpot Chicken Zoodle Pho


Serving Size: 4-5


  • 32oz water 

  • 3 Tbsp better than bullion chicken base 

  • 2 8oz chicken breasts (fresh or frozen) 

  • 1 cup shredded carrots (Pro tip: grate carrot on cheese grater!) 

  • 1 cup chopped bok choy 

  • ½ cup sliced white or yellow onion 

  • ¼  cup chopped cilantro (fresh) 

  • 2 bay leaf 

  • ¼  cup chopped basil (fresh) 

  • ¼ cup chopped cilantro (fresh) 

  • 1 tsp granulated garlic powder 

  • 1 Tbsp raw chopped ginger root (remove brown outer edge) 

  • 1 tsp fish sauce (optional) 

  • 2 large spiralized zucchini (use spiralizer!) 

  • 1 lime 

  • 1 cup bean sprouts (optional) 

  • Sliced jalapeno (optional) 


  1. Plug crockpot in and set to high. 

  2. To crockpot add: water, chicken base, chicken breasts, carrots, bok choy, onion, garlic powder, and ginger. If you decide to use fish sauce, add it here. 

  3. Place lid on crockpot and set time to 4 hours. 

  4. After 4 hours, remove chicken and cut into cubes, then return back to crockpot. 

  5. Add zucchini, basil, and cilantro. Let set on warm until ready to serve! 

  6. Top with sliced lime, bean sprouts, additional cilantro or basil, and jalapenos!
