Chewy Peanut Butter Granola Bar
Serving Size: 10-12
½ cup honey
½ cup peanut butter
½ cup coconut oil
2.5 cups raw oats (gluten free or regular)
1 cup rice cereal (similar to rice krispies)
1 tsp vanilla extract
2 Tbsp chia seeds
½ cup dried cranberries
½ cup chocolate chips
¼ cup chopped almonds
¼ tsp kosher or pink himalayan sea salt
¼ tsp cinnamon powder
Place all ingredients into a large bowl and mix with large wooden spoon until well blended.
Next, line 9x13 baking dish with tin foil or parchment paper and spray with non-stick spray.
Evenly spread batter into dish, pressing down with hands until even.
Cover with saran wrap and place in refrigerator for 1 hour.
Cut into bars (your preference for size here, friend!) and serve!
Keep stored in airtight container ( for best results keep refrigerated).
