Healthy Pumpkin Donuts

Serving Size: 8 


  • ¼  cup coconut oil 

  • 2 eggs 

  • ¼ cup maple syrup 

  • ¼ cup + 2 Tbsp pumpkin purée 

  • 1 tsp vanilla extract 

  • 1 ¼ cup almond flour 

  • ¼  cup raw oats (gluten free or regular) 

  • 2 Tbsp brown sugar

  • 1 tsp baking soda 

  • ½ tsp cinnamon powder 

  • ½ tsp pumpkin pie spice 

  • ¼ tsp pink Himalayan or kosher salt 

Optional maple glaze: 

  • 1 cup plain Greek yogurt 

  • ⅓  maple syrup 

  • ½  tsp pumpkin pie spice 


  1. Preheat oven to 325 degrees. 

  2. In a high powered blender, kitchen aid or large bowl, mix together: coconut oil, eggs, maple syrup, pumpkin purée, and vanilla extract. Blend on low-medium speed for 30-45 seconds or until well blended. 

  3. In a separate bowl combine all dry ingredients. Whisk with spoon then slowly pour into wet ingredient mixture. 

  4. Blend on low-medium speed for 30-45 seconds or until well mixed. 

  5. Next, spray non stick donut pan with non stick spray and evenly spoon batter into molds (just to brim of each mold). 

  6. Let bake for 20-25 minutes or until done. 

  7. Remove from donut pan (I use a butter knife to carefully scoop donuts out) and place on cooling rack. 

  8. For glaze: place all ingredients in bowl and whisk with fork. Drizzle over donuts! Serve! 

  9. Remember, if using the glaze, these donuts must be stored in refrigerator because of the yogurt. If you don’t use the glaze, they can be stored in an airtight container at room temperature.
