Creamy Chicken And Wild Rice Crockpot Soup
Serving size: 4-6
2 Tbsp olive oil
2x 8oz chicken breasts
1 cup chopped carrots
1 cup chopped celery
1 cup chopped mushrooms
½ cup chopped white or yellow onion
1 tsp granulated garlic
1 Tbsp dried parsley
1 Tsp multi-purpose seasoning (like Trader Joe’s Salute seasoning)
2 bay leaf
½ tsp dried thyme
5 cups water
1 cup dried wild rice blend
4 Tbsp better than bullion chicken base
Pinch of salt + pepper
2 cup plain almond milk
Place all ingredients except almond milk and rice in the crockpot.
Set crockpot to high for 2 hours.
After 2 hours, remove chicken and shred or cut into cubes, then place back into crockpot and add rice and almond milk.
Let cook on low for 1-2 more hours (until rice and chicken are done).
