Creamy Chicken And Wild Rice Crockpot Soup

Serving size: 4-6

Ingredients: 

  • 2 Tbsp olive oil 

  • 2x 8oz chicken breasts 

  • 1 cup chopped carrots 

  • 1 cup chopped celery 

  • 1 cup chopped mushrooms 

  • ½ cup chopped white or yellow onion 

  • 1 tsp granulated garlic 

  • 1 Tbsp dried parsley 

  • 1 Tsp multi-purpose seasoning (like Trader Joe’s Salute seasoning) 

  • 2 bay leaf 

  • ½ tsp dried thyme 

  • 5 cups water 

  • 1 cup dried wild rice blend 

  • 4 Tbsp better than bullion chicken base 

  • Pinch of salt + pepper 

  • 2 cup plain almond milk 

Directions: 

  1. Place all ingredients except almond milk and rice in the crockpot.

  2. Set crockpot to high for 2 hours. 

  3. After 2 hours, remove chicken and shred or cut into cubes, then place back into crockpot and add rice and almond milk. 

  4. Let cook on low for 1-2 more hours (until rice and chicken are done).  

  5. Serve!
