Healthy Breakfast Bagels
Serving size: 2-3
2 regular sized gluten free or organic bagels (best flavors for this recipe: plain, wheat, nut and seed, or combo)
2 Tbsp water
4 slices organic bacon
1 large avocado (sliced)
1 large roma tomato (sliced)
2 slices cheddar cheese
4 Tbsp organic cream cheese
Salt and pepper to taste
Spray a large frying pan with non-stick spray and turn heat to medium. Let the pan heat up for ~1-2 minutes, then add bacon.
Cook bacon until done and set aside. Turn heat down to low. DO NOT DRAIN GREASE!
Next, in a medium sized bowl, crack eggs and add to bowl. Add a pinch of salt/pepper to egg mixture and 2 Tbsp water. Whisk with fork for 1 minute.
Add eggs to hot pan. Be careful when pouring eggs into mixture, as the grease will be HOT!
Slowly cook eggs, stirring frequently to scramble.
When eggs are done, turn heat off.
Spread a thin layer of cream cheese on each bagel, then evenly distribute eggs to bagels.
Next, evenly top eggs with: bacon, avocado, tomato, and cheese.
Add top to bagel!
