{High Protein} Maple Chickpea Trail Mix!

Maple Chickpea Trail Mix

Serving size: 4-6


  • 1 15oz canned chickpeas (rinsed and drained) 

  • 1 Tbsp melted coconut oil 

  • 1 Tbsp organic maple syrup 

  • ⅓ cup raw or salted pumpkin seeds 

  • ⅓ cup raw almonds 

  • ½ cup raisins 

  • ½ cup dried cranberries 

  • ½ cup organic chocolate chips 

  • ¼ tsp cinnamon 

  • Pinch of pink Himalayan or kosher salt


  1. Preheat oven to 375 degrees. 

  2. Line baking sheet with parchment paper and spray with non-stick spray. 

  3. Rinse and drain chickpeas, then layer evenly onto baking sheet. 

  4. Next, pour melted coconut oil on top of chickpeas, tossing with spatula until evenly coated. Bake for 30-40 minutes (until crispy), flipping halfway through. 

  5. Remove from oven and let chickpeas cool completely. 

  6. Next,  gather a large mixing bowl and combine all ingredients, including chickpeas and maple syrup. 

  7. Mix with spatula and enjoy! 

  8. Store in airtight container OR a ziploc bag. 

  9. Does not need to be refrigerated.
