Serving Size: 12-14 cookies
¼ cup coconut oil
¼ cup maple syrup
½ tsp vanilla extract
¼ tsp salt
1 cup almond flour
½ cup raw oats (can be gluten free!)
1 Tbsp coconut flour
½ tsp baking powder
¼ tsp baking soda
¼ cup sugar in the raw
Preheat oven to 350 degrees
In a high powered blender or food processor add: eggs, coconut oil, maple syrup, and vanilla extract. Pulse 3-5x, then blend on medium speed for 20-30 seconds or until well blended.
Next, add remaining ingredients to wet mixture. Pulse 3-5x, then blend on low-medium for 30-40 seconds or until well blended.
Cover bowl with saran wrap and place in fridge for 30 minutes to harden.
Next, use spoon or ice cream scooper to scoop on 1 inch dough balls. *NOTE: this dough is wet! Do NOT add more flour!*
Place on greased cookie sheet and bake for 10-12 minutes.
