Crockpot White Chicken Enchiladas

Crockpot White Chicken Enchiladas

Serving size: 4-6


  • 2 cups cooked chicken (shredded or cubed) 

  • 1/4 cup chopped white onion 

  • 1/4 cup chopped green onion 

  • 1 cup sour cream or plain Greek yogurt 

  • 1/2 cup water 

  • 1 Tbsp better than bullion chicken base 

  • 1 tsp cumin 

  • 1/2 tsp granulated garlic powder 

  • 1/4 tsp chili powder 

  • 1/4 tsp kosher or pink Himalayan sea salt 

  • 1/4 tsp pepper 

  • 1 cup shredded cheese 

  • 4 large flour tortillas 


  1. In a large mixing bowl, add all ingredients except for tortillas. 

  2. Stir with large spoon or spatula until well mixed. 

  3. Next, plug crockpot in and set to high. Spray with nonstick spray. 

  4. Next, layer one flour tortilla on bottom of crockpot, then spoon approximately 1 cup of mixture on top of tortilla. Spread evenly with spoon. 

  5. Complete layering process until done. 

  6. Top with additional cheese if desired. 

  7. Set crockpot on high for 3-4 hours.
