Healthy Potato Salad

Blossoming Mommy and baby | Healthy Potato Salad

Serving Size: 4-6 


  • 4 large russet potatoes 

  • 5 hard boiled eggs (diced) 

  • ½ cup chopped dill or bread and butter pickles 

  • ½ cup chopped celery 

  • ½ cup chopped white onion 

  • 1 cup organic mayonnaise or plain Greek yogurt 

  • 3 Tbsp yellow mustard 

  • 3 Tbsp apple cider vinegar 

  • 2 Tbsp organic maple syrup 

  • Salt and pepper to taste 


  1. Rinse and peel potatoes, then cube into chunks. 

  2. Fill a large pot with 64 oz of water (or enough water to cover all of the potatoes) and place potatoes inside. 

  3. Bring pot of water to boil, letting boil for 8-10 minutes or until potatoes are soft. 

  4. Drain water and transfer potatoes to a large serving bowl. 

  5. Next, add eggs, pickles, celery and onion to potatoes. Mix with spatula or large spoon. 

  6. Lastly, in a mixing bowl, add mayonnaise or Greek yogurt, mustard, vinegar, syrup, and salt/pepper. Mix with a fork, then pour over potato salad. 

  7. Gently stir potato salad with large spoon or spatula.

  8. Cover bowl with saran wrap and let set/cool in fridge for 2-3 hours. 

Make it a meal! This dish pairs great with our grilled chicken and veggie kabobs! You go girl! xo!
