Serving Size: 4-6
1 lb ground burger
1 tsp granulated garlic powder
1 Tbsp olive oil
½ cup chopped white onion
½ cup chopped mushroom
¼ tsp pink himalayan salt or kosher salt
¼ tsp pepper
1 oz package organic taco seasoning dry mix
1 cup water
1 Tbsp better than bullion beef base
1 15oz can black beans (undrained)
1 15oz can refried beans
1 tsp cumin
1 cup sour cream or plain Greek yogurt
1 cup shredded cheddar cheese
3-4 cups organic tortilla chips
In a large frying pan, add olive oil and burger meat. Brown over medium heat until done. Remove from pan and do not drain grease.
Add to hot grease: garlic powder, onion, mushroom, salt, and pepper. Saute over medium heat, stirring frequently until tender (~7-8 minutes).
Next, turn heat back down to low and add meat to onion and mushroom mixture.
Add taco seasoning, water, and beef base to mixture. Stir with spatula and simmer on low for 10 minutes.
Preheat oven to 350 degrees.
Meanwhile, in a medium sauce pan, add: undrained black and refried beans and cumin. Turn heat to medium and stir with spatula, bringing to low simmer.
Lastly, spray 9x13 baking dish with non-stick spray. Layer tortilla chips, meat, beans, cheese, and sour cream. Complete layering until all ingredients are used. Add additional cheese to top of mixture if desired.
Bake for 20 minutes.
Top with fresh tomato, avocado, lettuce, green onion, salsa, and sour cream!
