Serving size: 9 servings
1 cup crushed organic graham crackers (crumb like consistency) (approx 6 graham crackers - place in large ziploc bag and use rolling pin)
½ cup melted coconut oil
1 cup organic milk-chocolate chips
½ cup peanut butter
3 Tbsp coconut oil
2 cup dairy free marshmallows
2 cup organic graham cereal (this is similar to golden grahams, but an organic version. Most stores carry a healthy version!)
½ tsp salt
¼ tsp vanilla extract
Preheat oven to 350 degrees.
In a medium sized bowl, mix together ½ cup melted coconut oil and graham cracker crumbs. Mix with hands until dough like texture is formed, then press “dough” into bottom of a 9x13 greased baking dish.
Bake for 20 minutes or until golden brown.
In a medium sized glass or microwave safe bowl, combine: chocolate chips, peanut butter , 3 Tbsp coconut oil, salt, and vanilla extract. Mix with fork for 45 seconds or until melted.
Next, add marshmallows and graham cereal to melted chocolate mixture. Stir with spoon until evenly coated and set aside.
After 20 minutes, remove graham crust from oven. Let cool for 10-15 minutes then pour chocolate mixture on top of crust.
Place bars in freezer for 1 hour. Cut into bars and serve!
Store in airtight container in freezer!
