Chicken Alfredo (Lightened Up!)

Serving size: 4-5 servings


  • 2 large chicken breasts 

  • 4 cloves garlic 

  • 3 tbsp olive oil 

  • ½ cup chopped mushrooms 

  • ¼ cup chopped white or yellow onions 

  • 1 cup chopped broccoli 

  • 1 cup chicken broth 

  • 1 cup shredded parmesan cheese 

  • 2 cup almond milk 

  • 1 cup raw cashews 

  • 3 Tbsp nutritional yeast 

  • 1 Tbsp dried parsley 

  • 1 tsp Italian seasoning 

  • 1 tsp granulated garlic powder 

  • ½ tsp kosher or pink Himalayan sea salt 

  • ½ tsp pepper


  1. In a large bowl, add 1 cup raw cashews and 2 cups cold water. Let soak for 30 minutes.

  2. Preheat oven to 350 degrees. Line baking sheet with parchment paper, non-stick spray and chicken breasts. Add a pinch of salt and pepper, then bake for 30 minutes or until done. 

  3. Once chicken is done, cut into bite size strips and set aside. 

  4. Next, place olive oil into a large fry pan and turn heat to medium-low. Add minced garlic cloves and saute until tender. 

  5. To garlic mixture add: mushrooms, onions, broccoli, chicken broth and additional salt and pepper. 

  6. Saute on medium-low, stirring frequently until tender (~10 minutes). 

  7. Once veggies are tender, add chicken breast and turn heat down to low simmer. 

  8. Next, drain cashews and place into a food processor or high powered blender. To cashews add almond milk, nutritional yeast, cheese, parsley, italian seasoning, granulated garlic, salt, and pepper. Pulse 5x, then blend on high for 60-90 seconds or until well blended and smooth. 

  9. Pour mixture over vegetable and chicken mixture on stovetop. 

  10. Turn heat to medium low, stirring occasionally. Let sauce simmer until warm ~10-20 minutes. 

  11. Serve over organic pasta or spaghetti squash!
