Mediterranean Quinoa Bowls
Serving size: 3-4
2 cups cooked quinoa (any color!)
1 cup chopped cucumber
1 cup chopped tomato
1/2 cup chopped white onion
1/2 cup chopped kalamata olives
1 cup chopped bell peppers (red, yellow, or orange)
1 cup hummus (can be store bought or BMAB hummus!)
1 cup feta cheese
Liquid amino or soy sauce for drizzle!
Cook quinoa according to package
Chop all vegetables and toppings and place in serving bowls
Spoon 1/2 cup quinoa into bowls and top with toppings! Drizzle with liquid aminos :)
Make it a meal! These quinoa bowls pair PERRRRFECTLY with crockpot chicken carnitas! Enjoy, sister!
