Make Ahead-Baked Oatmeal Cups
Serving size: 6 large muffins or 15 mini muffins
1 cup raw oats
1 cup almond flour
1 large mashed banana
½ cup melted coconut oil
½ cup nut butter of choice
⅓ cup applesauce
1 tsp vanilla extract
1 tsp chia seed
1 tsp ground flaxseed
⅓ cup maple syrup
½ tsp cinnamon powder
Pinch of salt

Fresh or frozen berries
Nuts and seeds
Preheat oven to 350 degrees
In a large mixing bowl, mix together all ingredients except for add-ins. Stir with spoon until well blended.
Next, use non-stick spray to grease muffin tin holder and evenly spoon batter into muffin tin, filling ~½ way full.
Lastly, sprinkly desired toppings on top of muffin batter (be sure to let your kids help pick out the toppings too!) The amount of toppings is TOTALLY your preference! Less or more, whatever works best for your family! :)
Bake for 25-30 minutes or until golden brown (for mini muffins) OR 30-40 minutes for large muffins.
Let cool for 20 minutes before serving.
Store in airtight container.
If freezing, let cool completely, then transfer to large ziploc bag to freeze.
Make it a meal! These make ahead oatmeal cups pair wonderfully with the chai freeze! Enjoy, sister!
