Lighted Up Twice Baked Potatoes
Serving size: 4 servings
4 large white sweet potatoes
½ cup unsweetened almond milk
2 tbsp sour cream
1 cup cheddar or mixed cheese
1 tbsp organic butter
½ tsp granulated garlic powder
½ tsp dried parsley
½ tsp pink himalyan or kosher salt
½ tsp pepper
Preheat oven to 350 degrees
Rinse potatoes and poke each potato ~10x with a fork.
Next, bake potatoes for 40-45 minutes or until done.
Let potatoes cool for 10 minutes, then cut in half lenghtwise.
Spoon ¾ of insides out, leaving ¼ of a border on potato skins.
Spoon mixture into large mixing bowl or kitchen aid and add remaining ingredients.
Mix on medium speed for 30-45 seconds, then spoon evenly back into potato skins.
Top with additional cheese and return to oven to bake for 10 minutes or until cheese is bubbling.
Make it a meal! These twice baked potatoes pair perfectly with the balsamic crockpot roast! Enjoy!
