BLT Salad and Homemade Dressing!

Serving size: 4 servings

Ingredients: 

Salad:

  • 1 head romaine lettuce or 6 cups spinach 

  • ¾ cup sliced cherry tomatoes 

  • ½ cup thinly sliced white or yellow onion 

  • ½ cup thinly sliced cucumbers 

  • 8 slices organic bacon 

  • 1 cup organic croutons (optional)

Dressing: 

  • ¼ cup olive oil 

  • ⅓ cup apple cider vinegar 

  • ⅓ cup dijon mustard 

  • 4 Tbsp water

  • 1 Tbsp maple syrup

  • ¼ tsp garlic powder

  • Salt + pepper to taste

Directions: 

For Salad: 

  1. Wash and pat dry romaine lettuce then cut, rip, or snip into bite size pieces and place in large salad bowl. 

  2. Add tomatoes, onion, and cucumber to lettuce. 

  3. Next, fry bacon in fry pan until crispy. Once done, transfer to plate to cool, then use fingers to rip into bite size pieces. 

  4. Place bacon and croutons on top of lettuce mixture. 

For Dressing:

  1. Place all ingredients into large bowl and whisk with fork. Let marinate together for at least 20-30 minutes, then use to drizzle over salad.  

Make it a meal! This BLT salad is SOOOOO yum when paired with the cauliflower cheesy bread! Enjoy, friend!
