Healthy Beef Stroganoff
Serving size: 4-6 servings
1 16oz package egg noodles or spaghetti noodles
1 lb ground beef
3 Tbsp olive oil
½ cup chopped white onion
½ cup chopped mushrooms
1/2 cup water
1 1/2 cup plain unsweetened almond milk
½ cup sour cream or plain Greek yogurt
1 tsp granulated garlic powder
1 tsp dried parsley
¼ tsp all seasoning
¾ cup mozzarella cheese
1 tsp dijon mustard
1 tbsp cornstarch
1 tbsp better than bullion beef base
1 tbsp liquid aminos
1 tsp pink Himalayan and kosher salt
1 tsp pepper
To large frying pan add 1 Tbsp olive oil and turn heat to low-medium. Add ground beef and brown until done.
Remove meat from pan and drain grease.
Add remaining olive oil to pan, then add onion and mushrooms, sautéing on low-medium until tender (~8 min).
Turn heat to medium-low and add meat back to mixture.
Next, add remaining ingredients except for: mozzarella cheese and corn starch.
Stir frequently with large spoon or spatula until mixture is well blended.
Let sauce come to a slow simmer and let simmer for 10 minutes.
Next, scoop 1/2 cup of liquid out of sauce mixture (try not to get any meat or vegetables, but if you do- that’s totally okay!) and to liquid, add cornstarch (this is going to thicken your sauce!) Whisk with fork until dissolved and pour back into meat/sauce mixture. Stir with spoon and let simmer for additional 5 minutes.
Top with mozzarella cheese.
Cook pasta according to package. Drain noodles and add to meat/sauce mixture.
Make it a meal! This hearty beef stroganoff goes great with easy roasted eggplant! Yummy! Enjoy, Momma!
