Healthier Queso Dip
Serving size: 6-8 servings
4 cups chopped (raw) white sweet potato (skin peeled) (~2 large sweet potatoes)
¼ cup diced green chilis
1/4 cup diced tomatoes
¼ cup finely chopped white onion
¼ cup chopped tomatoes
1 Tbsp better than bullion chicken base
¾ cup plain, unsweetened almond milk
1 tsp cumin
1/4 tsp granulated garlic powder
1/4 tsp diced jalapeños (optional!) *Can omit or add more for less/more spice!
¼ tsp pepper
¼ tsp kosher and pink Himalayan sea salt
1/2 tsp granulated garlic powder
2 Tbsp nutritional yeast
1 cup mixed cheese blend
Fill a large pot with water and bring to boil.
Once water is boiling, place sweet potatoes into pot and continue to let boil until potatoes are soft (~10-15 minutes)
Drain water and set aside.
Next, to a large food processor or high powered blender, add softened potatoes and ALL remaining ingredients. Pulse 5x, then blend on medium speed for 30 seconds or until desired consistency is achieved (chunky or creamy).
Transfer mixture back to stovetop, this time in a saucepan and let simmer on low for 10-20 minutes, stirring occasionally.
Serve with chips, over taco salad, or your favorite Mexican dish!
Make it a meal! This Queso dip goes wonderfully on top of the chicken carnitas! Eat as a chicken salad or in a fresh tortilla as burritos!
