Sheet Pan Garlic Parmesan Crusted Chicken

Serving size: 3-4


  • 2 large chicken breasts

  • 1 cup panko crumbs

  • 1/2 cup bread crumbs (traditional or Italian)

  • 2 eggs

  • 2 Tbsp olive oil

  • 1 Tbsp granulated garlic powder

  • 1 tsp Italian Seasoning

  • 1/2 tsp kosher or pink himalayan salt

  • 1/2 tsp black pepper

  • 1/2 cup shredded parmesan cheese


  1. Preheat oven to 350 degrees

  2. If chicken breasts were frozen prior, make sure they have defrosted!

  3. Using meat tenderizer, whack chicken until breasts are thin (approximately 30 seconds of whacking on each side~ ensuring to cover entire surface area of chicken breast!)

  4. Next, place panko, bread crumbs (Italian or traditional), and eggs into 3 separate bowls and set aside.

  5. Add garlic powder, Italian seasoning, and salt/pepper to bread crumb mixture, mixing with spoon.

  6. Cut chicken into thin strips and drizzle with olive oil.

  7. Next, whisk eggs with fork.

  8. Line baking sheet with parchment paper.

  9. Dip chicken (one by one) into egg mixture, ensuring all chicken has been coated with egg wash. Then panko crumbs. And lastly, bread crumbs.

  10. Place chicken one by one onto baking sheet and repeat process until done.

  11. Bake for 30-35 minutes or until done.

  12. Lastly, top chicken with parmesan cheese and turn oven to high broil.

  13. Broil for 1-2 minutes or until cheese is golden!

Make it a meal! This chicken goes GREAT with BMAB healthy scalloped potatoes! MMMMMMMM!!! Enjoy!
