Crockpot Chicken Tortilla Soup
Serving size: 4-5
2 large, 8oz chicken breasts
1/2 cup chopped white or yellow onion
1/2 cup chopped carrots
1/2 cup chopped celrey
1/2 cup chopped bell pepper (color of choice)
1/2 cup chopped green chilis
1/2 cup chopped mushrooms
1/2 cup frozen corn
2 medium russet potatoes
15 oz can black beans (don’t drain)
15 oz can kidney beans (don’t drain)
10 oz can diced tomatoes
32 oz water
3 tablespoons better than bouillon chicken base
1 tablespoon of liquid amin‘s
1 teaspoon granulated garlic powder
1 teaspoon cumin
1 teaspoon chili powder
1 tablespoon organic maple syrup
1/4 teaspoon pink Himalayan or kosher salt
1/4 teaspoon black pepper
Place all ingredients into crockpot.
Set crockpot to high and cover with lid; setting timer to 4-5 hours.
After three hours, take chicken breasts out and cut into cubes or shred with fork, then return back to crockpot.
