Crockpot Chicken Tortilla Soup

Barbecue Baked Beans

Serving size: 4-5

Ingredients: 

  • 2 large, 8oz chicken breasts

  •  1/2 cup chopped white or yellow onion 

  • 1/2 cup chopped carrots 

  • 1/2 cup chopped celrey

  • 1/2 cup chopped bell pepper (color of choice)

  • 1/2 cup chopped green chilis

  •  1/2 cup chopped mushrooms 

  • 1/2 cup frozen corn 

  •  2 medium russet potatoes

  • 15 oz can black beans (don’t drain)

  • 15 oz can kidney beans (don’t drain)

  • 10 oz can diced tomatoes

  • 32 oz water

  •  3 tablespoons better than bouillon chicken base 

  •  1 tablespoon of liquid amin‘s 

  • 1 teaspoon granulated garlic powder 

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  •  1 tablespoon organic maple syrup 

  • 1/4 teaspoon pink Himalayan or kosher salt 

  • 1/4 teaspoon black pepper 

Directions:

  1. Place all ingredients into crockpot.

  2. Set crockpot to high and cover with lid; setting timer to 4-5 hours.

  3. After three hours, take chicken breasts out and cut into cubes or shred with fork, then return back to crockpot.

  4. Enjoy!
