Creamy Chicken-Broccoli-Rice Casserole
Serving size: 4-6
1 cup uncooked short or long grain brown rice
1 Tbsp olive oil
2 cups water
3 Tbsp better than bullion chicken base
2 large chicken breast (fresh or frozen)
¼ cup diced white or yellow onion
¼ cup diced mushrooms
¼ cup diced zucchini
1 cup chopped broccoli
1x 12 oz can organic cream of chicken soup
1 tsp garlic powder
1 tsp onion powder
1 tsp multi purpose seasoning (I use Trader Joe’s Salute seasoning)
½ tsp pink Himalayan or kosher salt
½ tsp ground black pepper
1 cup shredded cheddar or mixed cheese
Add all ingredients to crockpot (layer: olive oil, then chicken, then remainder of ingredients) except for broccoli and cheese.
Set on high for 5-6 hours.
After 4 hours, open crock pot and remove chicken.
Cut chicken into cubes (bite size pieces), then return back to crockpot.
Add broccoli and cheese and close lid, allowing to cook for 1-2 more hours or until rice is soft.
