Creamy Chicken-Broccoli-Rice Casserole

creamy Chicken and Broccoli Rice Casserole

Serving size: 4-6


  • 1 cup uncooked short or long grain brown rice

  • 1 Tbsp olive oil

  • 2 cups water

  • 3 Tbsp better than bullion chicken base

  • 2 large chicken breast (fresh or frozen)

  • ¼ cup diced white or yellow onion

  • ¼ cup diced mushrooms

  • ¼ cup diced zucchini

  • 1 cup chopped broccoli

  • 1x 12 oz can organic cream of chicken soup

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp multi purpose seasoning (I use Trader Joe’s Salute seasoning)

  • ½ tsp pink Himalayan or kosher salt

  • ½ tsp ground black pepper

  • 1 cup shredded cheddar or mixed cheese


  1. Add all ingredients to crockpot (layer: olive oil, then chicken, then remainder of ingredients) except for broccoli and cheese.

  2. Set on high for 5-6 hours.

  3. After 4 hours, open crock pot and remove chicken.

  4. Cut chicken into cubes (bite size pieces), then return back to crockpot.

  5. Add broccoli and cheese and close lid, allowing to cook for 1-2 more hours or until rice is soft.
