#kidfriendly Sweet Potato Tatertots

Sweet Potato Tatertots

Serving size: 3-4 servings

Ingredients: 

  • 2 large sweet potatoes

  • ¼ cup almond flour

  • 1 tsp olive oil

  • 1 tsp pink Himalayan or kosher salt

  • ¼ tsp granulated garlic powder

  • 1 tsp black pepper

Directions:

  1. Fill large pot with approximately 64 oz of water and bring to boil.

  2. Meanwhile, peel outer layer of sweet potatoes.

  3. Once water is boiling, slowly add potatoes into pot.

  4. Continue to let boil for 20 minutes. Potatoes will be soft, but not too soft!

  5. After 20 minutes, turn off stove and  dump water from pot into a strainer.

  6. Return potatoes back to same pot.

  7. To potatoes add: almond flour, olive oil. Salt, garlic, and black pepper. Use a fork to mash potatoes down and to mix in ingredients.

  8. Next, preheat oven to 375 and line baking sheet with parchment paper. Spray parchament paper with non stick.

  9. Use large spoon to scoop “potato batter”  Into hands. Use fingers to mold “dough” into rectangular shape. Place potato onto parchment paper. Repeat process until done.

  10. Place baking sheet in oven for 15 minutes.

  11. After 15 min, switch temperature from bake to high broil.

  12. Broil tots for 90 seconds to add crispness.

  13. Serve!
