15 Minute Lemon Garlic Shrimp & Zucchini Noodles (ZOODLES!)

Instant Pot Chicken Carnitas

Serving size: 4-5

Ingredients:

  • 1 lb thawed (or fresh) shrimp-tails/skin peeled

  • 1 large lemon

  • 4 cloves garlic

  • 1/4 cup olive oil

  • 1/3 cup cooking sherry or white wine

  • 2 Tbsp dried parsley

  • 1 tsp dried red pepper flakes (optional)

  • 1 tsp brown sugar

  • 1 tsp kosher or pink himalayan salt

  • 1 tsp pepper

  • 2 large (or 4 medium) yellow or green zucchini

Directions:

  1. Place 3 tablespoons of olive oil into a medium to large size frying pan and turn heat to medium.

  2. Mince garlic and add two cloves to oil, stirring occasionally for two minutes or until tender.

  3. Next, using spiralizer, spiralize all zucchini and add to oil and garlic mixture.

  4. Stir occasionally over medium heat for 5 to 6 minutes, or until zucchini becomes nice and tender.

  5. Turn heat down to low, and pour zucchini into a large serving dish or large bowl.

  6. Next, turn heat back to  medium-low (Be careful! Don’t let the oil splatter you!) and add remaining olive oil and remaining two garlic cloves.

  7.  Stir with spatula occasionally until  garlic is tender, approximately for two minutes! 

  8. Next, add all shrimp and let simmer on low medium for one minute 

  9. While shrimp is simmering, add the juice of one large lemon (cut lemon in half and squeeze both sides, removing any seeds that may fall out). **As a cooking tip, I always squeeze the lemon juice into my hand and catch the seeds then I just dump the juice into the pan! If you have a juicer specifically for citrus, you can use that as well! 

  10. Add cooking sherry or white wine, parsley, red pepper, brown sugar, and salt and pepper to shrimp.

  11. REMEMBER! Shrimp cooks fast! Stir mixture with spatula and let simmer for 3 to 4 minutes, then flip shrimp to other side and let simmer for 3 to 4 minutes.

  12. Once the shrimp is done, add all zucchini back into pan and mix shrimp and zucchini mixture until well blended.

  13. Let dish simmer on low for 5 minutes.

  14. Serve immediately!
