Sheet Pan Steak and Veggies

Serving size: 4-5

Ingredients:

  • 1 lb sirloin steak

  • 1 red bell pepper

  • 1/2 large white or yellow onion

  • 1 large yellow zucchini

  • 1 broccoli floret

  • 1/4 cup balsamic vinegar

  • 1/4 cup olive oil

  • 1/3 cup dijon mustard

  • 2 Tbsp maple syrup

  • 1 tsp granulated garlic powder

  • 1 tsp Italian seasoning

  • 1 tsp onion powder

  • 1 tsp pink himalayan or kosher salt

  • 1 tsp black pepper

Directions:

  1. Poke steak with fork multiple times to tenderize the meat (poke consistently for 45-60 seconds), then slice sirloin steak into bite size pieces, trimming off fat as needed.

  2. After steak is sliced, place into large ziploc bag (we’ll use this to marinate!)

  3. Next, slice bell pepper, onion, zucchini and broccoli, then place into ziploc bag with steak.

  4. In a medium size bowl, combine: balsamic vinegar, olive oil, dijon mustard, maple syrup, garlic powder, Italian seasoning, onion powder, salt, and pepper.

  5. Whisk with fork then pour into large ziploc bag with meat and veggies.

  6. Seal ziploc bag shut and shake for 30 seconds or until evenly coated.

  7. Let marinade in fridge for at least 1 hour.

  8. Lastly, preheat oven to 375 degrees.

  9. Line baking sheet with foil or parchment paper, then spray with non-stick spray.

  10. Slowly pour out vegetable and meat mixture onto baking sheet and spread out evenly so no veggies or steak pieces are overlapping.

  11. Bake for 45-50 minutes, flipping halfway through!
