Cucumber Feta {DETOX} Salad

Cucumber Feta (detox) Salad

Serving size: 4-6

Ingredients:

  • 2 large english cucumbers

  • 1 large avocado

  • 1/2 cup purple onion (sliced)

  • 1/2 cup sliced grape tomatoes

  • 1/2 cup feta cheese

  • 2 Tbsp fresh diced dill (optional)*

  • 1/8 cup olive oil

  • 4 Tbsp apple cider vinegar

  • 1/2 tsp kosher or pink Himalayan salt

  • 1/2 tsp pepper

  • 1/4 tsp granulated garlic powder

Directions:

  1. Thinly slice english cucumbers (If you aren’t using English cucumbers, be sure to peel off the cucumber’s skin!) and place in large salad bowl.

  2. Next, slice entire avocado into bit size pieces and place into salad bowl with cucumbers.

  3. Add onion, tomatoes, feta cheese, dill, olive oil, apple cider vinegar, salt, pepper, and garlic powder to cucumber and avocado mixture.

  4. Toss until evenly coated, then cover bowl with saran wrap.

  5. Let set in fridge for 30 minutes before serving so flavors can marinate together!
