Grilled Chicken & Veggie Kabobs

Grilled Chicken and Veggie Kabobs

Serving size: 4-6

Ingredients:

Kabobs

  • 1 ¼ lb boneless chicken breasts (~2 large breasts)

  • 1 large bell pepper (color of choice)

  • 1/2 medium sized purple onion

  • 2 large yellow or green zucchini

  • 1 cup whole (not sliced) white capped mushrooms

Marinade

  • 1/2 cup honey

  • 1/4 cup liquid aminos or soy sauce

  • 2 Tbsp minced fresh ginger (use knife to cut off brown edge!)

  • 6 garlic cloves (minced)

  • 1 lime (juiced)

  • 1/2 cup ketchup

  • 1/2 cup olive oil

Gear

  • 1 large gallon ziploc bag

  • 10-12 skewers

Directions:

  1. In a medium sized mixing bowl, combine all marinade ingredients. Whisk with fork and set aside. Next, cut chicken into bite size, ½ inch pieces and place into ziploc bag.

  2. Cut bell pepper, onion, zucchini, and mushrooms into bite size, ½ inch pieces and place into ziploc bag with chicken.

  3. Gently whisk together marinade and pour into chicken and vegetable mixture inside ziploc.

  4. SEAL TIGHT!!! THEN… Shake like ya mean it! LOL. Okay, for real- shake for 30 seconds until chicken and vegetables are well coated.

  5. Lay mixture (in baggie) flat in fridge and let marinate for at least 1-2 hours.

  6. To Grill:

    1. Preheat grill to medium-high heat.

    2. Use skewers and layer vegetables and chicken as desired until all chicken and vegetables have been skewed. Layer however your little heart desires!

    3. Turn grill down to medium and spray grill with non-stick spray.

    4. Evenly place kabobs onto grill, grilling for ~7-10 minutes on each side or until done.

  7. To Bake:

    1. Preheat oven to 350 degrees.

    2. Use skewers and layer vegetables and chicken as desired until all chicken and vegetables have been skewed. Layer however your little heart desires!

    3. Line baking sheet with parchment paper and place kabobs evenly on sheet.

    4. Bake for 45-55 minutes or until done.
